As far as levels go, I have found that having the SRL set around 11 o'clock works well with almost any of my heads but you'll want to experiment and find the sweet spot for your gear. Also, there is no latency going through console so as I get deeper into tracking I will do more in console for that reason. I do go through console and use unison when I'm using plugins (Plexi/Bluesbreaker) and it does make a difference in how the amp responds vs insert on a channel strip. It sounds amazingly real although it does take time to find the right IR for the sound you are looking for. It's simply head/speaker out, Suhr RL, Apollo Hi-Z or Line input and an IR on the channel strip. It sounds like you may be over thinking it a bit.
